Sneaky Veggie Stir Fry


I know what you're thinking..."Where are the veggies??" 

Well that's not rice, people. :) This stir fry is made with cauliflower "rice", tempeh, and a few seasonings. That's it! This recipe is super easy to make, really great for you, and it's a crowd-pleaser. 

What You Need
-1 head of cauliflower
-1 package of tempeh (you can use chicken, but I wanted to skip the meat this time)
-minced garlic
-parmesan cheese
-whatever seasonings you desire (I just throw random ones in there and hope for the best)
-food processor or high speed blender 

What you need to do
1. Start by cutting your cauliflower into smaller pieces and placing in the food processor or blender. Pulse the processor or blender until the cauliflower has a couscous or rice-like texture. 
2. Cut your tempeh into small bite sized pieces. 
3. In separate pans, cook the cauliflower rice and the tempeh over medium high heat. Add your parmesan and garlic into the cauliflower along with whatever seasons you like. Do the same to the tempeh, but skip the parmesan. Cook both for about 7 mins. 
4. Add the tempeh to the cauliflower and combine well. And you're done!
